Hate Salads? Not With This Easy Dressing Hack.

Welcome to Day 10 of the Veggie Heavy March Challenge! Today is all about falling in love or at least crushing hard on salads. Think it can't be possible? Has the old rinky dink iceberg lettuce, filled sparingly with paper thin cucumbers and unripe tomatoes, left you feeling "blah" about salads? Well, those old guys are a thing of the past. Good salads are all about fresh and imaginative ingredients. So, while you might have broken up with stinky, old, wilted iceberg man, give his younger, sexier and better-looking brother a go. He's dressed to the nines with whole-food, unprocessed raw goodness that is a cinch to get your hands on. You'll be lusting after salads once you learn this simple recipe hack I'm about to share with you.

It's just that easy! Really! Pick a fruit then add a fat and your favorite acid from a vinegar or citrus fruit. Next, boost the flavor with a super food like ginger, chia or camu camu for added antioxidant power and maybe an herb like basil or cilantro with a small touch of sea salt to really bring out the flavors, then blend blend blend.

Let me start you off with a few of my favorite combinations: 

  • 1 cup mango, 1/3 avocado, squeeze of lemon for brightness, cilantro, sea salt
  • 1 cup strawberries, 1 tbsp hemp hearts, 1 tsp apple cider vinegar, basil, sea salt
  • 1 cup raspberries, 1 tbsp tahini, squeeze of lemon, camu camu, touch of honey, sea salt
  • 1 cup pineapple, 1 tbsp cold-pressed extra virgin olive oil, squeeze of orange, 1 inch ginger, sea salt

Delicious right?! Thicker dressings taste perfect coating kale and cabbage-based salads and thinner dressings are ridiculously good on daintier spring mixes and baby lettuce varieties.

Tip: Thicker dressers can be thinned with water to desired consistency
