Yay! 31 days of eating veggies everyday, maybe even multiple times daily!!! This. Is. Huge! I bet you feel Ahhh-Mazing! You definitely look it ;) Changing your eating habits is super hard! I hope that by adding veggies in without worrying about taking things away has helped. It's always nice to feel like you aren't giving up anything. But, a great byproduct of adding in is the crowding out part... where you add in so much good stuff, there's no room left for the unhealthy stuff. Woot woot! You look super beautiful, toned and awesome too... but gosh, don't you just feel so good? Like really really sore, omg, this still hurts, but hurts so good, wow, there's-my-abs-they're-not-just-a-myth good?!}, here's a deliciously sweet and gooey recipe to get your last dose of veggies in, in the SWEETest, chocolatey-est {So, I make up words... and?! ;)} most irresistible way yet...

Sweet Potato Brownies! Ooh, you guys. I love brownies. I love gooey. I love fudgey. But fudgey makes me pudgy when it comes from a dark chocolate Ghiradelli box at Target, so to avoid undoing all of my hard work and to feel my best, I found out how to make whole food, grain free, can be vegan, scrumptious brownies! I know! They're the perfect treat for celebration! 

When I first discovered brownies could be made with sweet potatoes, I had to try them! Because, I love sweet potatoes and I knew the texture would be perfect for a dense, fudgey brownie. So, I made Deliciously Ella's brownies. But, boo. They were a big, fat fail. Sad day. Her recipe uses brown rice flour which I found out is very bitter. Yuck. But this new and improved brownie recipe I'm sharing with you today uses coconut flour. Coconut flour is light, slightly nutty and a little bit sweet so it's perfect! And unlike the back of the Ghiradelli box, there's only a few ingredients in this recipe. So, if you're prone to tummy aches like I am, the simpler the food, the better! Ok you guys, I'm just so excited. Hurry and make these now. Or like yesterday. Mmm your house is going to smell fantastic and your tastebuds will delight in the chocolatey goodness. Enjoy!!!

S W E E T Surprise Brownies

serves 16ish ;)

1 cup cold sweet potato puree
1/2 cup unsweetened apple sauce
1/4 cup coconut oil, melted 
1/2 cup coconut nectar {any liquid sweetener should work}
1 teaspoon vanilla extract
 4 eggs
1/2 cup Enjoy Life chocolate chips or chunks 

1/4 cup coconut flour 
1/4 cup tapioca starch
1 teaspoon baking soda  
1/3 cup cacao powder
pinch of salt

Directions

1. Combine dry ingredients in mixing bowl

2. Place wet ingredients in food processor and pulse on high to combine

3. Add wet ingredients to dry

4. Stir until just combined

5. Place into greased pan

6. Bake at 350 for 40 minutes or so

7. Enjoy with a tall glass of chilled vanilla almond milk. YUM!
