The LTB Report. New Years with Nila.

Happy Friday! January sure is flying by, but before it goes, I have a fun interview with one of the most beautiful people I know, both inside and out, Mrs. Nila Grier. I was lucky to meet this beaming ray of light at Pure Barre as she became a regular in my classes. While these days, we don't get to LTB together much, I often run into her coming in and out of Clean Juice or picking up the best vegan cookies at Whole Foods. Of course, in true Nila fashion, she always has a smile beaming across her face and a big hug ready no matter how busy she is. And that she certainly is! Being step-mom to internet sensations {to say the very least! See what I mean?!} Nash and Hayes Grier and college football cutie Will Grier, really keeps her on her toes as she regularly jet-sets back and forth to the west coast. Yet, she remains completely unchanged by the fame. Even with a stout following on Instagram, Nila remains authentic and an incredible role model for all of her impressionable young followers. She's definitely someone to look to for inspiration. This girl lives balance... while eating right and exercising are important to her, she also makes sure to live a little and enjoy every second of this sweet life. Everyone, meet Nila.

YOU TRAVEL QUITE A BIT... SPILL YOUR SECRETS FOR STAYING ENERGIZED AND GLOWING ON THE GO: I drink a lot of water and eat as healthy as possible. The majority of my travel is to the west coast and girl, it’s easy to eat healthy in the Los Angeles area!

FAVORITE WORKOUT: Digging holes in the ground and planting flowers and herbs, which bring me joy year-round. But for a full-body workout, I go to Billy's Boot Camp in Denver, where I’m jolted into a high level of burning in my booty and everywhere else.

HOW DO YOU FIND BALANCE: Organic coffee. Quiet time with Jesus. Hubby and puppy-dog snuggles. Time with my three stepsons, when it’s possible (they keep me young and on my toes).

FAVORITE QUOTE: 1 Corinthians 13:13  -- And now these three remain: faith, hope and love. But the greatest of these is love. 

MOST INFLUENTIAL PERSON IN YOUR LIFE: My Mom! She teaches me how to live, laugh, love and put my big girl panties on when needed.

WEIRDEST THING YOU'VE EVER EATEN IN THE NAME OF HEALTH: Maybe it was so weird I put it far out of my mind. No idea. My crew might say I eat a lot of weird things.

JUICE OR SMOOTHIE: Depends. If I’m headed to a tennis match or just got beat up at bootcamp, I suck down a smoothie with hemp protein. But if I’m feeling a little run down or want to cleanse, I partake in a Clean Juice, juice. And hey!, a fresh shot of wheat grass never hurts.  (Why don’t I own a cool Clean Juice truck?!) <---- Right?! Me too, Nila! #goals

GO-TO LUNCH: Most days I have an organic Kale Salad at home. I dice up cucumbers, tomatoes and crush up a few of my fav chips (Red Hot Blues by Garden of Eatin’); Then, I dump some Makoto Ginger dressing on top (this is very tasty). <---- PB&Julie upgraded recipe coming soon!
If I’m in Charlotte helping with our family business, Grier Interiors (shameless plug), I stop by Luna's Living Kitchen for the Avocado & Basil Sandwich. {recipe below!}

FAVORITE INDULGENCE: I’m hesitant to share this since I’ve told too many and the supply has gone scarce. (Ok, twist my arm, a little more... ok, mercy!) The vegan chocolate chip cookies from Whole Foods! They are to live for! The key--be sure they aren’t more than 2 days from the ‘baked’ date and if you see a oily spot on the box- grab em! There are no preservatives so you gotta eat and share!

FOOD PHILOSOPHY: Eat clean 'n raw as much as possible! Now, that doesn’t mean I always do; but I do try to fuel my body with good things. My mom is a vegan and shows me how to prepare deliciousness that’s good for my family.

DO YOU BELIEVE IN CLEANSING? IF SO, WILL YOU CLEANSE FOR THE NEW YEAR: Most definitely! As soon as my hubby is back from coaching in the Army All-American game (yay, hubby!) we’ll partake in a Clean Juice cleanse! Cleansing together is much easier!

CAUSE CLOSEST TO YOUR HEART: Special Olympics. My parents tried for 9 years to have kiddos but God had a better plan. They followed, obeyed and adopted a precious baby boy-- my brother (two years later my mom birthed my sis and 22 months later-- me!). My brother is “special needs” (aka AWESOME) and a very special athlete! He practices every week and competes like a champ... and wins! (the “R” word is unacceptable in my book)!

Avocado & Basil Sandwich

{Luna's Living Kitchen Copycat}

This vegan sandwich is filling, fresh and delicious. Make extra hummus and cashew cream so you can easily make it anytime.

2 slices sprouted bread {I like Food for Life}, toasted

1/2 large avocado, sliced

2 slices of fresh tomato

red onion, thinly sliced

handful sprouts

fresh basil leaves, to taste

2 tablespoons raw lemon-parsley hummus {recipe here}

1-2 tablespoons cashew sour cream {recipe below}

Cashew Sour Cream

1 cup cashews, soaked and rinsed

1/2 cup water

1 probiotic capsule

Directions: Combine ingredients in high powered blender or food processor. Place in sealed container and chill in fridge for at least 2 hours. 

For Sandwich

  1. Spread hummus on both sides of bread
  2. Stack ingredients 
  3. Drizzle generous amount of cashew sour cream on top
  4. Place other slice on top
  5. Omnomnom :)
