Spicy Kale Salad
This salad is so good! Really! If you tried kale before and you didn't like it, it's because you didn't have it in this salad. The spicy kick of red paper flakes, the brightness of the fresh squeeze of lemon and the creaminess from the avocado really come together to make this kale salad anything but boring rabbit food! Give it a try!
Ingredients: {Organic is best!}
lacinato kale {dinosaur kale}, julienned
1 tsp fresh mint
1 tsp fresh flat leaf parsley
1/2 avocado
1 tsp apple cider vinegar
red pepper flakes
squeeze of fresh lemon juice from 1/2 lemon
1 tsp {or more} hemp seeds
diced red pepper
chopped english cucumber
pumpkin seeds {for garnish}
Directions:
Begin by tearing the kale leaves from the stem. Gather leaves and slice them long ways {julienned}. Place in a large bowl. Slice avocado in half, then slice the half into fourths and scoop out the flesh. Place in bowl with kale. Chop fresh herbs and add them to the bowl. Add the apple cider vinegar, red pepper flakes, fresh lemon and hemp seeds to the bowl and massage the kale and ingredients with your hands. This helps break down the kale making it softer and tastier. Wash your hands and set the bowl to the side. Now, chop up your red peppers and cucumbers. Add them to salad and mix. Plate and top with pumpkin seeds. Enjoy!
