Molly's Energizing {no bake} Amaze-balls

Today is the last page of 2015 then, ready or not, it's time to open a new book. An exciting book, where you're the author and it's your journey filling the blank pages with love, triumph, laughter, heart ache and adventure. It's crazy to think that another year has already come and gone. Another chapter is closing and a new one awaits. It's scary but thrilling, hopeful but daunting... how can this be the best year yet? The year where goals are not just met, but exceeded, where there is more time for friends, learning, and playing with your littles and the year where happiness abounds on the daily? While I don't have all the answers or the plan that will get you {or me 😬} on the way to the best year yet, I do have the ultimate snack recipe to power you through the journey.

Hailing from the shiny, bright and ever bubbly Molly Gregory of our latest edition of the LTB Report, this energizing {no bake} amaze-balls recipe is quick, simple and delicious and the perfect snack to chow down on as you put pen to paper and scribble down your 2016 plan for a goal-crushing, green juice chugging, lift-tone and burning, happiest of happy new years yet. It's loaded with chocolate chips {allergen free, of course} and balanced with whole grain oats and body-loving flax seeds. It's super simple to make, just measure, mix and roll. The hardest part is waiting 15 minutes for them to firm up in the fridge. However, if practicing patience is part of your 2016 goals, this recipe is totally vegan, so eating the goodness straight from the bowl is completely acceptable and strongly encouraged {hello, gotta make sure it's safe! 😉}.

Molly's Energizing {no bake} Amaze-balls

{makes nearly 40 ping pong sized balls}

INGREDIENTS

3 cups quick cooking oats {I used Trader Joe's gluten free}

1/4 cup ground flax seed

1/4 cup chia seeds {this is my favorite brand}

1/2 cup wheat germ {optional}

1 bag of chocolate chips {preferably dairy and soy free like these} or cacao nibs

1 cup local, raw honey {I used coconut nectar to keep it vegan}

1 16 ounce jar of unsweetened peanut butter or almond butter

DIRECTIONS

  1. Mix together the first 5 ingredients in a large bowl
  2. In a smaller bowl, combine the nut butter and sweetener
  3. Add the sweetened nut butter to the oat mixture and stir well to combine
  4. Using your hands, roll mixture into small balls and place on a baking sheet
  5. Place baking sheet in fridge and allow the Amaze-balls at least 15 minutes to firm up
  6. Store remaining balls in an air tight container in the fridge
  7. Enjoy!
