I love a good hummus -- creamy, thick, flavorful. It's the perfect accompaniment to a plant-based snack attack since it's loaded with body-loving nutrients and muscle-toning protein. What I'm not a big fan of: beans. For a few months now, I notice I just don't feel very well after eating them so I gave them the axe. But, I still love a good dip for my veggies and spread for my sammies, so I began making my hummus creamy, thick and super flavorful with amped up nutrition and digestibility by swapping out the beans for...

Zucchini! What can't this long-faced green superstar do? From breakfast "zoats" to anytime "zoodles" this water dense and nutrient rich veggie is super versatile... Not to mention easy on the wallet and a cinch to grow in your own backyard if that's your thing. 

Without further ado, meet your new snack time bff: 

Veggie Heavy Basic "Zummus" {YUMmus??!}

Serves 6-8

2 zucchinis 

3/4 cup tahini 

1/2 cup fresh lemon juice

2 medium garlic cloves, minced

1 tsp cumin

1/2 tsp paprika

sea salt

Optional Add-ins:

handful of fresh herbs like cilantro, basil, parsley

1-2 tbsp fresh pesto

cayenne or jalapeño to taste

2 tbsp nutritional yeast

sundried tomatoes

drizzle of favorite olive oil on top with pine nuts

  • Cilantro lime {just add in cilantro and replace lemon with lime, then sprinkle with dash of cayenne}
  • Pizza {add basil, nutritional yeast and about 5 sundried tomatoes {soaked in warm water for 5 minutes}}
