Can't Stop Double Chocolate Chip Cookies

"Can't stop won't stop" was the caption that accompanied my picture of what I'm pretty sure is the very best chocolate chip cookie ever over on Instagram. How do I know this? Because, not only am I a chocolate chip cookie connoisseur, but I am also a woman who knows her limits, knows when to stop eating, will not overindulge in a sweet treat. Until now. You guys, I could not stop eating after 1/2 a cookie, not after 1 1/2 cookies, not 2... I had 3 cookies! Plus another before bed, you know, just to make sure they're still good when they're not fresh from the oven {they are!}.

What I noticed though, besides my apparent complete lack of self-control in the presence of the right fresh-from-the-oven cookie, was, this cookie gave me energy! I wasn't left feeling lethargic, although I did have a slight belly ache from the sugar rush I'm not accustomed to these days. But, after eating copious amounts of chocolate chip goodness, the littles and I embarked on a long walk and played on the playground. Now, this was 4pm... I'm normally pretty exhausted once this "dang, I've been awake 12 hours already" mark hits. Not this time! We were running around and playing and swinging and it felt so good! Thank you cookies!!! While I think this is my millionaire dollar recipe and should be kept top secret, you guys reaaallllllyyyyy went crazy for it. And because I love you all, I'm willing to share this life-changing recipe with you. You won't believe the simple ingredient list, but it really comes together to make warm chocolatey discs of heaven. Time to get baking!

Can't Stop Double Chocolate Chip Cookies

3/4 cup almond flour

1/2 cup cashew flour*

1/4 tsp salt

1/4 tsp baking soda

1/4 cup melted coconut oil

1/4 cup coconut sugar

1 tsp vanilla extract

1 egg

1/2 cup Enjoy Life Chocolate Chips {I highly recommend using both chunks and mini chips...mmm!}

*Tip: I made my own cashew flour. It's easy! Simply measure out your unsalted cashews {roasted or raw} and pop them in your food processor. Process them on high until they're a sand-like texture. 

Directions: 

  1. Preheat oven to 350
  2. Combine dry ingredients in a bowl
  3. Combine wet ingredients in a separate bowl
  4. Add the wet ingredients to the dry and mix together
  5. Stir in chocolate chips and chunks
  6. Scoop good size cookie balls onto cookie sheet spread out so they have room to expand
  7. Cook about 10 minutes depending on how big you make them
  8. Let cool on baking sheet for 1-2 minutes then transfer to plate
  9. Pour some almond milk, stuff your face with the tastiest, guiltless cookies ever and enjoy!
