Mango Berry Acai Bowl

Good morning and happy Monday! No, that's not a contradiction at all! For all you Monday dreaders out there, it's time to view Monday through a new set of lenses. French lenses. Not only do French women {reportedly} not get fat, but it appears their meaning of Monday is a bit more optimistic and empowering. The most hated, picked on, and abused day of the week literally translates to "My day" over there. So, turn your day into MonYAY with this beautifying, body-loving Mango Berry Acai Bowl. Hey, it's a start...

If you never had an acai bowl, you should. To quote Dr. Seuss, "these things are fun and fun is good." Not only do they taste like the most incredible thing you've ever put to your lips, but they're chock full of beauty-enhancing ingredients such as fatty acids from the acai, vitamin C from the berries, vitamin A {beta carotene} in the mango and vitamin E for glowing skin from the spinach. And did I mention they're fun to eat? Thicker than your traditional smoothie, this bowl of goodness is best enjoyed with a spoon and begs to be topped with fresh berries, banana slices, cacao nibs, goji berries, coconut shreds, granola... the combinations are endless!  So, what are you waiting for? Get blending! :)

Mango Berry Acai Bowl

1/2 cup pineapple coconut water {I use and LOVE Evolution Fresh pineapple coconut water}

1 handful of spinach

1 tbsp acai powder {Sunfood is my favorite!}

1/2 cup frozen mixed berries

1/2 cup frozen mango chunks

1 tsp beauty dust {optional but so lovely}

shake of cinnamon

Directions: Add to blender and blend on high for 30 seconds or until desired. Smoothie should be thick. Scrape out of blender and add to bowl. Top with goodies like shredded coconut, chia seeds, cacao nibs, fresh berries, banana, granola, nut butter, etc. Enjoy!
