Spicy & Cheezy Kale Chips

It's National Eat Your Veggies Day!!! Woot woot! So, what better way to celebrate than with the "Queen of Greens" herself, kale?! Spicy, crispy, cheesy and insanely addictive... these kale chips have the power to make even the biggest veggie hater come over to the green side. Really. Try it. Maybe it's your kid, your hubby, you... simply whip this easy peasy recipe up in 5 minutes and 15 minutes later... tasty, fresh, warm and cheesy chip goodness is served. Tell your veggie hater {er, yourself} to close his/her eyes and then shove a chip in. Do it quick. Watch your fingers! Then, BAM! Converted. It's just that easy. You, I mean, they really do love veggies. Life. Changing.

Should you need some more convincing, kale's superfood status is legit: 

  1. low calorie, high fiber: a winning combo for weightloss. These chips fill you up without filling you out. Hello bikini body ;) ow ow!
  2. high in iron: energizing and blood-building, this leafy green has more iron than beef per calorie.
  3. antioxidant packed: eat kale to arm yourself against cancer, heart disease and Alzheimer's

I can't seem to stop snacking on them as soon as I take them out of the oven. So stinking good. But, fyi, they don't keep longer than a day, so get snacking!

Spicy & Cheezy Kale Chips

1 bunch of curly kale

2-3 tbsp sesame tahini 

2 tbsp nutritional yeast

1/2 tsp cayenne {more or less depending on tolerance!}

Directions: 

  1. Preheat oven to 350
  2. Line baking sheet with foil 
  3. Tear kale into good size pieces, keeping in mind that they shrink down when cooked, away from the stalk
  4. Rinse kale and dry well
  5. Place in large mixing bowl and add tahini, nutritional yeast and spices
  6. Stir, combining well until evenly coated
  7. Spread kale in an even layer on cookie sheet
  8. Cook 15 minutes at 350 or until crispy and dry
  9. Enjoy!
  10. Store any leftovers in brown paper bag once cool
