Happy Eats Granola

So excited to share this recipe with you today! I call it "happy eats" because this granola has a little something for everyone. It's vegan ― you're welcome animal lovers. It's gluten-free ― no belly aches over here! It's fully loaded with scientifically-backed mood and energy boosting ingredients. So, happy dance there. And you can keep right on dancing because this granola is chock full of stay-full-for-hours fiber that keeps you satisfied and your weight in check. Plus, the sweet scent of cinnamon swirls around as it bakes filling the air with memories from Grandma's house and snicker doodles on Sunday.  And it's crunchy, sweet and satisfying. What's not to love?

Happy Eats Granola

Servings: lots :)

3 cups gluten free oatmeal {I used Trader Joe's}

1/4 cup puffed amaranth {like rice crispies but amaranth... found it one day on clearance at Earth Fare so went with it. You can sub rice crispies or almonds}

1/4 cup quinoa {I used tricolor sprouted. Just use what you have}

1/2 cup pumpkin seeds

1/4 cup chia seeds

1/4 cup + 2 tbsp coconut oil, melted 

1/4 cup + 2 tbsp almond butter

2 tbsp coconut sugar 

1 tbsp coconut nectar {can sub honey or maple syrup}

1 tsp maca powder {optional}

add-ins: goji berries, dried fruit, coconut shreds, cacao nibs

Directions:

  1. Preheat over to 350. Line cookie sheet with parchment paper
  2. Combine dry ingredients in one bowl
  3. Combine wet ingredients in another bowl
  4. Pour liquid mixture over dry ingredients and mix until evenly coated
  5. Once combined, spread oat mixture on baking sheet in an even layer
  6. Bake about 30 minutes, checking it and moving it around every 10 minutes
  7. Remove from oven when it's a nice toasted brown color
  8. Once cool, mix in add-ins of choice
  9. Store in an airtight container {I used big ol' mason jars}
  10. Enjoy!
