I have been meaning to make a version of this kale salad forever now. For those who are reading that aren't local, 131 Main is a super yummy, kind of expensive restaurant that serves the best kale salad and beet-based veggie burger you've ever had. Really. We {Pure Barre LKN girls!} get this pretty much every single time we go and we tell everyone else to get it too. It's that good. But, it's not always easy to make it to the restaurant every time you crave the kale, which is often. So, I finally bought some curly kale {on sale!} and went to work. Oh and I went above and beyond and made it organic, vegan and gluten free because dairy and gluten aren't the best on digestion {read: bloating and pimples... at best 😝} and because I love you and want you all to be healthy and strong and not eat toxins all day. 

Oh, and I omitted croutons of any kind because I feel like the parmesan cheese has enough texture to cover both the cheese and crouton bases. Feel free to add in small bread crumbs if you so desire. Or maybe just keep larger bits of brazil nuts scattered throughout to keep this paleo-licious.

Ok, get ready to make the best kale salad ever. Just not right now. It's Tuesday. And Tuesday is 1/2 off all bottles of wine at 131. You should definitely always go to 131 on Tuesdays for kale and wine. Make this on a random Thursday. There aren't any specials on Thursday that matter. Enjoy!

131 Main Kale Salad Copycat

The kale salad of your dreams, easy to make, paleo and vegan friendly and absolutely delicious! The brazil nut "parmesan cheese" with turmeric really takes it up a few notches. Yum! 

The kale salad of your dreams, easy to make, paleo and vegan friendly and absolutely delicious! The brazil nut "parmesan cheese" with turmeric really takes it up a few notches. Yum! 

Gather:

1 bunch organic curly kale, sliced into thin strips

1/2 cup olive oil

juice from 1 lemon + zest from 1/2 lemon

1 garlic clove

few dashes of red pepper flakes 

brazil nut "parmesan cheese" {recipe below}

Directions:

  1. Make dressing: Blend olive oil, lemon juice and zest, garlic clove and red pepper flakes in food processor until well combined and smooth. 
  2. Make brazil nut "parmesan cheese:" In a food processor, combine 1/2 cup brazil nuts, 1 tbsp nutritional yeast, couple shakes of turmeric, dash of black pepper and sea salt until coarse like "real" parmesan cheese. 
  3. Place kale into a big serving bowl, add dressing as needed and part of the "cheese." Plate the kale salad and top with more brazil nut "parmesan cheese" as desired. 
  4. Stick that fork in the green goodness, close your eyes and take a bite and tell me that doesn't taste just like "the real thing!" Yum!
  5. Store leftover dressing and "parmesan cheese" in air tight containers for a week or so.
