Protein Packed Blueberry Pancakes

Happy 4th! Celebrate America's birthday or you know, any day ending in -y, with these fluffy paleo-esque pancakes dotted with fresh, bursting blueberries. Top with sliced, organic strawberries, some coconut shreds, a drizzle of raw superfood almond butter and you have a red, white and blue breakfast perfect for Uncle Sam himself!

Go ahead stare, it's ok. I get it. These protein-rich pancakes are made with whole food ingredients, no refined sugars and still came out fluffy and irresistible.

Protein-Packed Blueberry Pancakes

serves 1 and a baby ;)

3/4 cup almond flour

1/4 tsp baking soda

pinch of sea salt

sprinkle of cinnamon

handful of blueberries

1 egg

2 tbsp unsweetened vanilla almond milk

1 tbsp coconut nectar {or desired sweetener}

squeeze of 1/2 lemon or lime

coconut oil for frying

Directions:

  1. Combine dry ingredients
  2. In another bowl, combine wet ingredients
  3. Add wet mixture to dry and add berries, stir until combined
  4. Heat nonstick pan with coconut oil
  5. Add batter a couple tablespoons at a time or however big your like your cakes!
  6. Flip when bubbles start to form
  7. Repeat until batter is finished
  8. Plate, topping with more blueberries, coconut shreds, strawberries and a drizzle of nut butter or maple syrup. 
  9. Enjoy!
