It’s hard to believe summer is already coming to an end. Sadly, that translates to only a couple of weeks left of berry season. Which means, I am urgently and desperately trying to get my fill of those tiny, antioxidant packed fruits before fall ushers in and pumpkin spice dominates the world market. So, with copious amounts of berries filling my fridge, my freezer and my chipmunk cheeks, I decided to send summer’s finest out with a bang and stuff them in a donut. A healthy, easy to make and even easier to eat, donut ….. You’re welcome.

If you’ve never baked with almond flour before, you’re going to love it. It’s simply finely milled almonds that make for a vitamin and protein packed flour substitute for traditional, nutritionally devoid white flour in baking. Adding sweet vanilla coconut sugar, fresh blueberries and zesty meyer lemon give this donut a mouth-watering explosion of light summer flavor in every berry-licious bite. This is one donut that makes the perfect on-the-go breakfast or snack that will make the transition into fall routines that much sweeter.

Glazed Meyer Lemon Blueberry Donuts

{makes 10 small donuts}

Ingredients

1 cup of almond flour

3 eggs

1/4 teaspoon salt

1/4 teaspoon baking soda

2 Tablespoons vanilla coconut sugar {can substitute 1 teaspoon vanilla + 2 Tablespoons your sweetener of choice}

1 cup of fresh blueberries

1/4 cup unsweetened vanilla almond milk, warmed

2 Tablespoons ALOHA powdered coconut water* {can substitute powdered sugar but will not be refined sugar free}

Juice and zest from 1/2 of a Meyer lemon {any lemon will work, but this one is sweeter}

Directions:

  1. Whisk the almond flour, salt, baking soda and coconut sugar until well combined.
  2. Add in eggs, vanilla {if separate from sugar} and whisk until incorporated.
  3. Fold in the blueberries with a wooden spoon.
  4. Place mixture in a donut maker {similar to waffle maker}, filling almost to the edge, and closing the lid until light indicates they’re done. OR use a nonstick donut pan and bake in a 300 degrees F preheated oven for about 20 minutes or until they begin to brown.
  5. Place on cooling rack and drizzle with glaze.

To make Meyer lemon glaze:

Warm almond milk until almost hot. Add in ALOHA powdered coconut water {or powdered sugar} 1 tbsp at a time, whisking until the mixture thickens but is still pour-able. Squeeze in the juice from the lemon, add in the zest and whisk until incorporated.
