Hi everyone! December is seriously one of the busiest months. #amiright?! Besides Christmas, it’s also the end of the school year here in Oz. So, not only am I getting the Christmas prezzies, decorations and Elf on a Shelf ready for the onslaught of mistletoe madness, I am also packing my calendar full of end-of-the-year performances and picnics, dance concerts and plays for the kiddos — which, seriously, I’m so excited about.
But between all of that, taking on some extra work and working on my fitness, I’m pretty much left running on fumes. Umm… hello, Hangry! Looking for something quick, healthy and made with real food (and a craving for muffins), I decided to try my hand at whipping up some easy bliss balls. And, not that I ever doubted myself, but they turned out amazing. So, you should make them too.
Berries + lemon have always been a favorite combo of mine, so that’s what makes up the base of these delightful little snack balls. And, with only a handful of ingredients needed to make them, this recipe is one of my busy-mom favorites. Plus, according to Nutritionist Kimberly Snyder of The Beauty Detox Solution (My healthy-eating bible) says that lemon is an amazing cleanser fruit with more than 200 enzymes making it one of the most restorative foods for the liver. I’m pretty sure that translates to “eat this after having too many rosés the night before.”
Of course, if you have some fancy superfood powders and unicorn dust in your pantry, you can totally add them in. But, this basic recipe is perfect on its own, and I’m pretty sure they’ll not only cure your “hanger,” but they’ll also make you happy. I’m no doctor/nutritionist/happiness whisperer, but yummy and pretty things that basically make themselves totally bliss me out. #getinmybelly
Without further ado, here’s the simple recipe for these Berry Bliss Balls. Enjoy!
5-Ingredient Berry Bliss Balls
makes approximately 8 balls (depending on how big you like them! HA!)
1 cup simple raw berry jam (1 cup mixed berries, 1/4 cup maple syrup or coconut nectar, juice of 1 lemon, 2 tbsp chia seeds. Mash berries and stir in remaining ingredients.)
3/4 cup gluten-free oat flour
1/2 cup vegan vanilla protein powder (I love the raw, sprouted and fermented Amazonia Raw but Sunwarrior is also a good option)
1-2 tbsp unsweetened nut milk, as needed
pinch of salt
crushed rose petals, superfood powders, hemp seeds or coconut shreds, optional for rolling
Combine all ingredients, except almond milk, in a mixing bowl.
If too dry, add in the almond milk slowly using one tablespoon at a time
Once desired consistency is achieved, shape into balls
Roll in garnishes, if desired
Snack happy :)
Store in an airtight container in the fridge for 3-4 days
