"Be Happy" Raw Cookies {Goji and Cacao Nib!}

Hello lovelies! Today, I have a beautifully easy and delicious recipe to share with you. My little lovebug and I decided it was time to make cookies. It had been far too long. However, that has had a lot to do with it being summer in Sydney. So hot, you guys. Regardless, when you need cookies, you need cookies #amiright?! So, there was just one solution — no bake cookies. Well, wouldn’t you know I ended up turning on the oven yesterday anyway — Hubby wanted some lasagna *facetopalm* And, since so many of you watched my Instagram stories and wanted the completely plant-based, gluten-free, grain-free lasagna recipe, I’m posting it next week. Yay! So, if you haven’t subscribed to the blog yet, please do! You don’t want to miss all the goodness!

OK, back to the cookies. You guys, I swear I wasn’t so scattered before I had kids. Well, even when I just had one kid. Now, it’s like “SQUIRREL!” every couple of minutes. And, if I’m out and I have my kids, I apologize in advance. I will never finish a sentence. But, my winning personality will totally make up for that ;) {at least that’s what I keep telling myself - HA!}

Wow, now seriously, back to the cookies. If you’re like me, you likely have all the ingredients in your pantry now to make these little happy cookies. I call them “Be Happy” cookies because cookies just make you happy, ya know? Happy to make them with your loved ones, to share them {or not}, to eat their ooey gooey, sweet and chocolate-y goodness. They can bring up precious memories. Cookies = Happiness. Well, only if they’re chocolate chip. Because if they’re not chocolate chip, then why bother?

You’ll need some nut flour {I used a mix of almond, cashew and macadamia — any sort will work!}, gooey medjool dates, vanilla extract, cinnamon, cacao nibs and goji berries. A tablespoon of lucuma is recommended but totally optional. It’ll lend a beautiful caramel-y flavor to the cookies. If you’re unsure about this super Peruvian fruit, you can go into NAKED (the little packaging-free shop in Australia) and get a small amount to try — that way you don’t spend an arm and a leg on a full-size package if it’s not your jam.

Oh, and not only did I add the goji berries to make the cookies prettier, but also, to make you shine even brighter. Did you know that these brilliant little super berries pack a super punch? Goji berries are packed with antioxidants and according to Kimberly Snyder in her new book, “Recipes for Your Perfectly Imperfect Life,” they protect our bodies from inflammation and fortify our immunity. And, they are full of vitamins and contain eighteen different amino acids supporting our vitality and true beauty. How amazing is that?! #snackpretty

Anyway, gather your ingredients, play your favorite tunes, invite the kiddos or your best mates and get happy making these yummy raw treats.

“Be Happy” Raw Cookies {Goji and Cacao Nib}

makes around 10 cookies

2 cups nut flour {I just blitz a combo of my favorite nuts in the nutribullet and Voila! nut flour. In this recipe, I used 1 cup cashews, 1/2 cup almonds, 1/2 cup macadamias}

1/4 cup cacao nibs {use dairy-free chocolate chips instead if you’d like, but of course, then they won’t be raw}

1/4 cup dried goji berries

5 gooey medjool dates, if not soft and gooey then soak in warm water around 10 minutes or so

1/2 teaspoon vanilla extract

1/2 teaspoon lucuma, optional

DIRECTIONS

Add nut flour and gooey dates to your food processor and process until a smooth dough forms.

Empty into a small/medium mixing bowl. Add lucuma, vanilla, goji berries and cacao nibs and stir to combine.

Using your spoon, scoop out about a ping pong sized ball of dough. Roll it up then flatten into a cookie shape.

Continue doing this until you run out of dough.

Let firm up in fridge for about 20 minutes.
