Avocados are the star of the show in this simple “salad.” Known for their good fats, these creamy green cuties are also an amazing source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta-carotene, and omega-3 fatty acids.

Enjoying the salad with fresh mint helps to improve digestion, the tomatoes provide skin-loving benefits thanks to the antioxidant lycopene, coriander (cilantro) helps to detox heavy metals in the body and the grapefruit and lime juice are an amazing source of vitamin C — important for collagen synthesis. Oh, and the red cayenne peppers help to boost metabolism. For a bump in protein, sprinkle with hemp or sprouted sunflower seeds and #omnomnom. INGREDIENTS

1 hass avocado, halved and pitted

1 200g punnet of snacking tomatoes, diced

1 grapefruit, peeled and diced

1 fresh cayenne pepper, or to taste (hello, FIRE!)

2 tablespoons fresh mint, julienned

2 tablespoons fresh coriander (cilantro), rough chopped

1/2 lime juice

drizzle of high quality extra virgin olive oil, if desired

red pepper flakes, to garnish

DIRECTIONS

  1. Place avocado halves on a pretty white plate

  2. Combine chopped tomatoes, grapefruit, cayenne pepper, fresh herbs and lime juice in a small mixing bowl — maybe add a pinch of salt to make the flavors POP!

  3. Spoon mixture beautifully over avocado halves

  4. Drizzle with olive oil

  5. Sprinkle with red pepper flakes and ENJOY!
