Tangled Miso Sesame Salad with Veggie Noodles *Vegan, Gluten Free, Raw*

Woohoo! It’s April and life is good, am I right? Spring Break has just begun (and by Spring Break I, of course, mean Fall Break because #Oz) lol Honestly, I’ve been calling it Spring Break this whole entire time, and it is only now I realize, “Whoops, you’re not in America anymore, ToTo.” Palm to face! When Emma Kate and Caleb do silly things like this I say, “At least you’re cute.” With myself, it’s, “At least you know your way around a veggie.” Ok, I don’t really say that. But, I really do have a way with veggies. Some even call me the “Veggie Whisperer.” (No, nobody calls me that.) But, after tasting today’s tasty Asian-inspired sesame “noodle” salad, I bet SOMEBODY finally will! :)

Tropical Chia Glow Bowl *VEGAN AND RAW*

Hello my lovelies and happy New Year! Even though the New Year started a week ago, I’m just now catching up. So, I’m celebrating today. And what better way to celebrate than with a bowl of nourishing sunshine, am I right?!

One thing I decided on this year was upping my intake of chia puddings because of the skin-loving benefits. My face is always smoother, plumper {in a good way!} and glowy-er when I do. Combine that with my craving for sunshine since this dreary summer Sydney weather isn’t giving me any, and BAM! This tropical chia bowl of good mood food was born. Grab a bite of summer with the recipe below!

5-Ingredient Berry Bliss Balls (Vegan, gluten-free)

Hi everyone! December is seriously one of the busiest months. #amiright?! Besides Christmas, it’s also the end of the school year here in Oz. So, not only am I getting the Christmas prezzies, decorations and Elf on a Shelf ready for the onslaught of mistletoe madness, I am also packing my calendar full of end-of-the-year performances and picnics, dance concerts and plays for the kiddos — which, seriously, I’m so excited about. Like, really.

But between all of that, taking on some extra articles at work and working on my fitness, I’m pretty much left running on fumes. Umm… hello, Hangry! Looking for something quick, healthy and made with real food (and a craving for muffins), I decided to try my hand at whipping up some easy bliss balls. Sweet Potato, Quinoa & Kale Summer Salad *The Boathouse at Shelly Beach Inspired Recipe*

As promised in my last post, here is a more traditional Thanksgiving dish to serve up for your family and friends. This recipe is based on the “Summer Salad” from the iconic Boathouse at Shelly Beach. I thought I could never fully recreate this simple salad because it was just too perfect and served up beautifully next to the sandy shoreline. Turns out I was wrong. I TOTALLY NAILED IT.

Think piles of kale and quinoa mingling with roasted sweet potato chunks, dressed in a simple vinaigrette and topped with a mountain of crunchy almonds, pretty-in-pink pickled red onions and juicy pomegranate arils. This simple, yet statement-making, salad is all you need for a taste of summer “Straya” style.

Wake up to Beautiful: "Beauty" Pebbles with Green Goddess Mylk

When I was little, I wouldn’t eat breakfast unless it had a cartoon character on the box or at least went snap, crackle and pop once the milk was poured. Maybe you can relate? Now, that I’m older, and dare I say a bit wiser, I still love a good bowl of cereal {like really, really love} but prefer to satisfy that craving in a way that loves my body right back. After all, even though Post has declared its Fruity Pebbles gluten free that doesn’t make it healthy. Do you even know what’s in that over-processed, neon-colored stuff? I checked it out and well, it’s not very pretty:

Chai-Spice Persimmon Love Muffins

I remember the first time I went to Brick Street Cafe in Greenville, SC – a charming cafe with a brick facade and quirky interior adorned with odds and ends and antique finds. I was interning at the local news station and one of the reporters insisted she take me here for lunch because the cake is amazing. Well, twist my arm. So, we went. I ordered the fresh fruit plate with a side of love muffin. While the death by chocolate cake was seriously to die for, what really left me longing for more was that humble little love muffin, which by no means, was small at all. This muffin, always served warm, jam-packed {literally} with a cream cheese filling and a dollop of raspberry jam and just the right amount of crumble is certainly made with love… and butter and white flour and lots and lots of sugar.

131 Main Kale Salad Copycat

I have been meaning to make a version of this kale salad forever now. For those who are reading that aren't local, 131 Main is a super yummy, kind of expensive restaurant that serves the best kale salad and beet-based veggie burger you've ever had. Really. We {Pure Barre LKN girls!} get this pretty much every single time we go and we tell everyone else to get it too. It's that good. But, it's not always easy to make it to the restaurant every time you crave the kale, which is often. So, I finally bought some curly kale {on sale!} and went to work. Oh and I went above and beyond and made it organic, vegan and gluten free because dairy and gluten aren't the best on digestion {read: bloating and pimples... at best 😝} and because I love you and want you all to be healthy and strong and not eat toxins all day.
