Tangled Miso Sesame Salad with Veggie Noodles *Vegan, Gluten Free, Raw*

Woohoo! It’s April and life is good, am I right? Spring Break has just begun (and by Spring Break I, of course, mean Fall Break because #Oz) lol Honestly, I’ve been calling it Spring Break this whole entire time, and it is only now I realize, “Whoops, you’re not in America anymore, ToTo.” Palm to face! When Emma Kate and Caleb do silly things like this I say, “At least you’re cute.” With myself, it’s, “At least you know your way around a veggie.” Ok, I don’t really say that. But, I really do have a way with veggies. Some even call me the “Veggie Whisperer.” (No, nobody calls me that.) But, after tasting today’s tasty Asian-inspired sesame “noodle” salad, I bet SOMEBODY finally will! :)

LOVERS Truffles *Raw Vegan Sexy*

Being happy isn’t all sunshine and rainbows. It’d be nice if it were, of course. Sunshine is definitely a big part of it – the best feeling part of it maybe. But feeling good is ALL of it. Embracing all of it — darkness too. It’s the moon. It’s the stars. And how beautiful is that? How beautiful that the whole world is inside of you? Inside of me. Inside of us.

And, how beautiful that we live in the only world with chocolate?!

Festive Rudolph-Surprise Lamington Bites *RAW VEGAN*

Lamingtons are an Aussie classic. Traditionally a vanilla sponge cake of sorts, this down-under favorite is coated with chocolate sauce and coconut shreds and sometimes found filled with jam.

Since this dessert is rarely a vegan treat, I decided to get my nom on with a comparable and easy-to-make — running on limited time here as a busy working mom — bliss ball variation.

Coming together with a handful of ingredients, this Christmas-y bite of Oz is just “too easy, mate.”

Arugula Harvest Salad *Living Kitchen Copycat*

Hi you guys! As you know, we’ve moved to the other side of the world. While it’s absolutely amazing here, I miss my Charlotte eats SO MUCH. Luna’s Living Kitchen, or as it’s called now — “Living Kitchen” — was one of my favorite spots ever. The food was mostly raw, gluten-free, organic/local and was completely vegan, aesthetically appealing and crazy good. I was a HUGE fan of their iced chai, Flying Lucy smoothie, Fire & Brimstone burger, Caesar Salad and this amazing Arugula Harvest Salad.

Chai-Spice Persimmon Love Muffins

I remember the first time I went to Brick Street Cafe in Greenville, SC – a charming cafe with a brick facade and quirky interior adorned with odds and ends and antique finds. I was interning at the local news station and one of the reporters insisted she take me here for lunch because the cake is amazing. Well, twist my arm. So, we went. I ordered the fresh fruit plate with a side of love muffin. While the death by chocolate cake was seriously to die for, what really left me longing for more was that humble little love muffin, which by no means, was small at all. This muffin, always served warm, jam-packed {literally} with a cream cheese filling and a dollop of raspberry jam and just the right amount of crumble is certainly made with love… and butter and white flour and lots and lots of sugar.

Vampires, witches, goblins oh my! Halloween is right around the corner and with it comes the shorter days, longer nights and superstitions that will send chills down your spine for reasons that can’t be measured in degrees Fahrenheit! Originating from the ancient Celtic belief that, on Halloween night, the line between life and death blurs and spirits of the dead return to Earth. Today, tales of witches, black cats and mummies still loom, captivating children and adults alike, but the true horror has subsided into a night filled with candy, trickery and well, more candy! Filled with high fructose corn syrup, artificial flavors and colors and saturated fat – the sugar bombs filling trick-or-treat baskets just might be the most frightening part of the night!
