Mermaid Sushi *Raw Vegan*

Wow, that 2-week holiday was the longest school vacation ever. Like, EVER. I was all like, “What day is it? Who am I? Where are we? Why are you still here?!”

Well, we’re here now. We’ve made it to the other sides moms — mums? — and now, we miss them. Admit it. We do. I probably said that to Caleb like 25 times today. *Sigh*

However, if you follow me on Instagram (I mean, of course you do… right?) at pb_n_julie, you noticed I was still able to post some homemade deliciousness that only looks — ok, and tastes — fancy and magical. Mermaid sushi. Yum! Inspired by these gorgeous Australian beaches and crashing-one-day, smooth-as-a-lake-the-next, ocean, this gorgeous plant-based roll was actually pretty simple to make. And, even easier to eat ;)

Hemp Caesar Salad with Smoky "Parmesan" Crumble

Making the switch to a plant-based diet can feel overwhelming. You might be wondering, but what will I eat? How will I ever be full eating rabbit food? If I love animals so much, then why am I eating all of their food?! (haha) Or, the classic, “But where will I get my protein?!” Have you seen the gorilla? That big ol’ jungle beast didn’t get ripped eating animals — he did it on plants. And, I’ll show you how you can too by cutting out the middle man — er animal.

Becoming Plantbased

Hey hey friends! As you may or may not have seen on Instagram (in this post), I opened up and allowed myself to become completely vulnerable. I shared my “why” for this blog – for embarking on this journey. Ultimately, it’s for you. For your families. For love. Because, isn’t that what this life is all about? More and more, I think it is. It’s about connecting. Not hiding our “scars” or perceived “imperfections,” it’s about laying it all out there – this is me. And, I’m perfectly imperfect. There’s light and there’s dark. I’m an “and” not an “or.” And, so are you.

Tropical Chia Glow Bowl *VEGAN AND RAW*

Hello my lovelies and happy New Year! Even though the New Year started a week ago, I’m just now catching up. So, I’m celebrating today. And what better way to celebrate than with a bowl of nourishing sunshine, am I right?!

One thing I decided on this year was upping my intake of chia puddings because of the skin-loving benefits. My face is always smoother, plumper {in a good way!} and glowy-er when I do. Combine that with my craving for sunshine since this dreary summer Sydney weather isn’t giving me any, and BAM! This tropical chia bowl of good mood food was born. Grab a bite of summer with the recipe below!

Festive Rudolph-Surprise Lamington Bites *RAW VEGAN*

Lamingtons are an Aussie classic. Traditionally a vanilla sponge cake of sorts, this down-under favorite is coated with chocolate sauce and coconut shreds and sometimes found filled with jam.

Since this dessert is rarely a vegan treat, I decided to get my nom on with a comparable and easy-to-make — running on limited time here as a busy working mom — bliss ball variation.

Coming together with a handful of ingredients, this Christmas-y bite of Oz is just “too easy, mate.”

Red Thai Curry in a Hurry {Vegan, Gluten Free}

Hi friends! While it’s summer here in Australia, {fun fact: The first day of a new season is always on the first day of the month it falls in here. So, December 1st was the first day of summer. My friend says they do it so it’s easier to remember. Ha!} we’ve still had some pretty cool nights. That’s when I whip up this easy curry. It’s hearty, grounding and like a cozy hug on a chilly evening. Plus, it’s ready in no time, and the whole family actually loves it. Win win and win.

Arugula Harvest Salad *Living Kitchen Copycat*

Hi you guys! As you know, we’ve moved to the other side of the world. While it’s absolutely amazing here, I miss my Charlotte eats SO MUCH. Luna’s Living Kitchen, or as it’s called now — “Living Kitchen” — was one of my favorite spots ever. The food was mostly raw, gluten-free, organic/local and was completely vegan, aesthetically appealing and crazy good. I was a HUGE fan of their iced chai, Flying Lucy smoothie, Fire & Brimstone burger, Caesar Salad and this amazing Arugula Harvest Salad.

Un-PHO-gettable Easy Vegan Pho

Pho, a type of Vietnamese soup, has been around for more than 100 years, but thanks to my recently-addicted husband, I’m just now hopping aboard this noodle train. I admit, I’m not much of a soup fan. I can eat it if I have to, but I’m certainly not going to seek out a bowl and crave it anytime soon. I’m a fan of vibrant, fresh, crunchy food so the thought of a mushy soup, especially one loaded with raw sliced beef in an {more than likely} MSG-laced broth of boiled bones doesn’t quite appeal to me. Until now. I mean, my plant-based copycat pho does at least.

Veggie Heavy Hummus

I love a good hummus -- creamy, thick, flavorful. It's the perfect accompaniment to a plant-based snack attack since it's loaded with body-loving nutrients and muscle-toning protein. What I'm not a big fan of: beans. For a few months now, I notice I just don't feel very well after eating them so I gave them the axe. But, I still love a good dip for my veggies and spread for my sammies, so I began making my hummus creamy, thick and super flavorful with amped up nutrition and digestibility by swapping out the beans for...
