Sweet Potato, Quinoa & Kale Summer Salad *The Boathouse at Shelly Beach Inspired Recipe*

As promised in my last post, here is a more traditional Thanksgiving dish to serve up for your family and friends. This recipe is based on the “Summer Salad” from the iconic Boathouse at Shelly Beach. I thought I could never fully recreate this simple salad because it was just too perfect and served up beautifully next to the sandy shoreline. Turns out I was wrong. I TOTALLY NAILED IT.

Think piles of kale and quinoa mingling with roasted sweet potato chunks, dressed in a simple vinaigrette and topped with a mountain of crunchy almonds, pretty-in-pink pickled red onions and juicy pomegranate arils. Hi you guys! As you know, we’ve moved to the other side of the world. While it’s absolutely amazing here, I miss my Charlotte eats SO MUCH. Luna’s Living Kitchen, or as it’s called now — “Living Kitchen” — was one of my favorite spots ever. The food was mostly raw, gluten-free, organic/local and was completely vegan, aesthetically appealing and crazy good. Nila's Favorite Kale Salad... Upgraded

You might remember Nila mentioning her go-to lunch in the latest LTB Report was a kale salad loaded with delicious fresh veggies, but surprisingly topped with a store-bought ginger dressing and crumbled spicy tortilla chips. It sounds absolutely tasty with that added spicy crunch factor along with the queen of greens herself, kale. But, and this is a big but, all that veggie goodness is covered in a big glob of beauty and health stealing criminals like GMO's, MSG, gluten, chemicals and preservatives that do not deserve a spot on your plate. 131 Main Kale Salad Copycat

I have been meaning to make a version of this kale salad forever now. For those who are reading that aren't local, 131 Main is a super yummy, kind of expensive restaurant that serves the best kale salad and beet-based veggie burger you've ever had. Really. We {Pure Barre LKN girls!} get this pretty much every single time we go and we tell everyone else to get it too. It's that good. But, it's not always easy to make it to the restaurant every time you crave the kale, which is often. So, I finally bought some curly kale {on sale!} and went to work. Oh and I went above and beyond and made it organic, vegan and gluten free because dairy and gluten aren't the best on digestion {read: bloating and pimples... at best 😝} and because I love you and want you all to be healthy and strong and not eat toxins all day.
